Tacos right? They could just as easily hang out in the sandwich category I supposed. Either way they’re quick, delicious, unconventional and healthy. Ingredients and directions listed below [yep…keep scrolling to the end].

Recipes

INGREDIENTS
1) Bacon Lady
Corn Tortillas
Bacon, cooked [I prefer nitrate free and I like to bake mine for 10 to 15 minutes in the toaster oven at 400 degrees!]
Pomegranate
Lettuce
Mayonaise [I like the kind made with olive oil]
Fresh Ground Black Pepper

2) Sweet Potato Lady
Corn Tortillas
Sweet Potato, cooked & warm
Black Beans, cooked & warm
Fresh Cilantro [dried would work too]
Red Pepper Flakes [if you want a little spice]
Salt & Pepper to taste

3) Tuna Lady [yeah…I’ve got nothing…]
Corn Tortillas
Tuna [I like albacore tuna packed in water]
Radishes, thinly sliced
Dill Pickels, thinly sliced
Mayonnaise [again, I like the kind made with olive oil]
Salt & Pepper to taste

DIRECTIONS
Preheat oven or toaster oven to 350 degrees. Place as many corn tortillas as you plan to eat onto a baking tray or toaster tray. Heat the tortillas until they are slightly crispy but still playable and soft enough to be folded in half. It usually takes about 2 to 3 minutes per side in our toaster oven. Watch them closely so they don’t burn.

If using mayonnaise, spread a thin layer over tortillas. Fill each tortilla with the ingredients above to make which ever sandwich you’d like. The bacon one is by FAR my favorite.

If you want to watch someone deseed a pomegranate in 10 seconds you’ll want to view THIS video. The technique really starts at about 1 minute 55 seconds. Worked like a charm for me (as long as you’re gentle with the ‘stretching’ part…if you’re a little overzealous the seeds will fly all over the kitchen which happened on my first attempt).

      HA – that’s wonderful! The bacon pomegranate sandwich taco was a total accident. A total, delicious, accident. Experimenting is the best. Let me know what you try next in the kitchen.
